Plum Preserves with Smoked Chiles & Cayenne

A plum-forward smoky spread is reminiscent of a fruit butter and a jam combined with the occasional bits of poached plum from jar to jar. With its slow, mild heat and smoky profile, we love using this as a glaze for carrots, chicken or salmon. This preserve also loves a cheese board and plays well with a variety of cheeses but we especially like it paired with a sharp cheddar or the Gouda from friends, Urban Stead Cheese Co. in Cincinnati, Ohio. (www.urbansteadcheese.com/) We are dying to try it swirled and baked into brownie batter too.
